We are pleased to introduce our new Costa Rican micro-lot, a coffee with a unique exotic aroma profile that's sure to pique your interest. When people taste this limited-edition batch from Hacienda Sonora in the Central Valley region, they often comment on its delightful fruity notes, saying, 'Wow, this fruity flavor is excellent.'

This coffee, part of our new limited edition, comes from the Hacienda Sonora in the Central Valley region of Costa Rica. It's a Villa Sarchi variety, processed using the natural method, and produced by Alberto and Diego Guardia, experts in creating high-quality green coffee micro-lots. The farm covers approximately 100 hectares, with 55 hectares dedicated to shaded coffee and 35 hectares preserved as a wild forest reserve. It operates solely on 100% renewable energy produced on-site.

The Farm: Hacienda Sonora is located in the Central Valley of Costa Rica, nestled at the base of the famous Poas Volcano. The farm encompasses around 100 hectares, including 55 hectares of shaded coffee, 35 hectares of wild forest reserve, and 10 hectares of sugar cane cultivation. It enjoys an average altitude of 1,200 meters (3,900 feet) above sea level. The coffee plantation benefits from the fertile volcanic soil, surrounded by lush vegetation and exotic trees. The diverse ecosystem not only provides an ideal environment for producing high-quality coffee but also serves as a sanctuary for various bird and animal species.

The Process: Hacienda Sonora operates a micro coffee mill located next to a well-preserved 150-year-old sugar cane mill. It efficiently utilizes farm-generated energy. All coffee undergoes honey and natural processing methods, resulting in distinctive sweetness, cacao flavors, and fruity notes that complement the unique cup profiles of different coffee varieties. While these methods require extra effort, they deliver a taste that's worth every bit of it. Additionally, significant water savings are achieved, with the honey method alone saving over 3 gallons of water per pound of coffee and the natural process not requiring any water.

Green Energy: Hacienda Sonora relies entirely on 100% renewable energy, generated on the farm premises. This sustainable energy source powers the coffee mill and provides free electricity to some farm residents and workers. The green energy is harnessed from a nearby natural water stream using a specialized turbine called a Pelton Wheel.

The Staff: The success of Hacienda Sonora is greatly attributed to its dedicated employees, who contribute their energy, consistency, and local insights. The well-being of these employees is a top priority, not only for the farm's tranquility but also for its overall success.

Distinguishing itself from other farms, Hacienda Sonora provides free accommodations to all workers and their families in the farm's houses. The farm covers the costs of water, waste disposal, and a portion of their electricity expenses. Additionally, every employee benefits from the Costa Rica Health Insurance system.The relationship between the farm and its workers is built on mutual respect, fostering a personal connection. The roastery will be closed for the festive season from 25 December to 5 January 2025 inclusive. For delivery before Christmas, order before 19 December. Last shipment on 24 December, then deliveries will resume on Monday 6 December.
