Competition Coffee

Description

Felipe and Carlos Arcila wanted to add their own project to their coffee producing legacy, developing a new farm called Jardines del Eden. The aim is to grow exotic coffees, such as this Sidra sourced in Ecuador, which adapts very well to the Colombian soil. It remains flavourful and productive. They have also developed their own fermentation process, to enhance the flavours without hiding the genetics of the variety. The Sidra has been fermented in a dry aerobic environment for 24h and then anaerobically for 48h. This fermentation helps to enhance the natural red fruit notes of the Sidra and adds a syrupy texture.
